Gourmet Market Grilled Scallops with
Honeydew-Avocado Salsa
Finely grated lime zest
2 tablespoons fresh lime juice
1 tablespoons extra-virgin olive oil, plus more for drizzling
1 ½ pounds honeydew melon, rind removed and melon cut into ¼-inch
dice
1 avocado, cut into ¼-inch dice
Salt and freshly ground black pepper
2 pounds large sea scallops
Directions
1. Light the grill. In a large bowl, combine the lime zest and juice with
the 1 tablespoon of olive oil. Using a rubber spatula, gently fold in
the diced honeydew melon and avocado. Season the salsa with salt and
black pepper.
2. Drizzle the scallops with olive oil and season with salt and black
pepper. Grill over moderately high heat, turning once, until nicely
charred and just cooked through, 3 to 4 minutes per side. Transfer the
scallops to plates, spoon the salsa alongside, and serve.
Serves 4
Gourmet Market Grilled Corn with Lime and
Cheese
4 ears corn
2 tablespoons reduced-fat mayonnaise
1 tablespoons fresh lime juice
1/8 teaspoons chili powder
2 ounces finely grated feta cheese
Directions
1. Heat grill to high. Soak whole corn in cold water, turning
occasionally, 10 minutes. Transfer to grill. Cover; cook, turning, until
husks are charred, 10 minutes. Remove.
2. Using a kitchen towel, pull back husks; remove and discard corn
silks. Return corn to grill (with husks pulled back and off heat).
Cover; cook, turning, until kernels are charred in spots, 10 to 15
minutes.
3. Combine reduced-fat mayonnaise, lime juice, and chili powder; brush
on cooked corn. Dust with finely grated feta cheese. Season with coarse
salt; serve with lime wedges
Serves 4
Gourmet Market Warm Dijon Potato Salad
2 pounds small red potatoes, each cut into quarters
1½teaspoons salt
¼ teaspoon coarsely ground black pepper
2 stalks celery, thinly sliced
½ cup thinly sliced red onion
¼ cup cider vinegar
¼ cup Dijon mustard
¼ cup (loosely packed) fresh parsley leaves, coarsely chopped
Directions
1. In 4-quart saucepan, place potatoes, enough water to cover, and 1
teaspoon salt; heat to boiling on high. Reduce heat to medium-low; cover
saucepan and simmer potatoes about 8 minutes or until just fork-tender.
2. Meanwhile, in large bowl, stir together sliced celery, sliced onion,
cider vinegar, Dijon, 1/2 teaspoon salt, and 1/4 teaspoon coarsely
ground black pepper.
3. Drain potatoes well. Add hot potatoes to bowl with celery mixture.
With rubber spatula, gently toss to coat well. Spoon potato salad into
serving bowl; sprinkle with chopped parsley and serve warm. Makes about
6½ cups.
Gourmet Market Dessert - Grilled Bananas
You need one banana per person (or more - these are delicious!), vanilla
ice cream and the liqueur of your choice - try Cointreau or .. yum ..
Bailey's. Just place the bananas on the grill until the skin goes black.
Transfer them to a plate and slit the bananas lengthways. Add a small
dollop of ice cream and a liberal dose of liqueur. (For kids or drivers,
replace the liqueur with your favorite honey from the market). Y-u-m.
